At Chasseur they use the Optimal Gauge on all pieces, giving an even heat distribution whilst also retaining heat with no hot spots.Because the lids are made to a specific weight, each one will create a perfect seal. Additionally, each lid has an internal ringed pattern which encourages moisture to return to the meal which enhances even distribution of flavour and moisture.
